Are you surprised by the food name? Well, these are the leaves from potatoes! This is a popular dish in Liberia (west Africa). We are going to walk through the cooking process to this tasty and healthy meal together.
Potatoes green like a lot of green leaves are packed with a lot of nutrients that are beneficial to our body. Some major nutrients contained in potatoes green are:
• Vitamin A&C.
• Folic acid.
• Fiber.
• Calcium.
• Iron and so on and so forth. Imagine all that in one tasty bowl! Your body will thank you & of course you’ll enjoy eating it. I will break down some of the steps to making this meal and share some tips of how to get it finger licking. Are you eager for some potatoes green now? Well, first thing first, wash your greens thoroughly - cleaning your veggies is the best tip I’ll give. Let’s get into the Cooking! Total Prep Time: 30 mins. Servings: 4-5 servings. Cook Time: 45 -60 minutes. Preparing your potatoes greens; Wash greens in water and cut/chop into smaller pieces. You can use chopping board or traditional hand cut (Liberian-style). INGREDIENTS • Smoked fish, beef, crab, chicken feet, cow skin, snails, fresh fish& goat meat. Liberians cook with a lot of different meat – the more protein the better! • Red palm oil/ water oil • Hot Pepper 2-5 pieces • 1 Onion • Bell pepper SEASONING • ½ tbsp salt. • 1 tbsp black pepper. • Two (2) maggi crevette shrimp/ chicken buillon or maggi star crayfish/ Nigerian Maggi. • 1 knorr cubes. • 1 tbsp of badia complete seasoning. • 1 tbsp of lawry’s all purpose chicken seasoning.
Next:
• Cook/boil your meat and other proteins
• For fish, I used air fryer to speed up the process, but you can use vegetable oil & fry on the stove
Then:
• Place a pot on fire and add the palm oil into the pot.
• Put the chopped greens into the oil and allow to cook for 5-10mins.
• After your greens are cooked, add the seasonings.
• Then add in the meat (fish last to avoid crushing it when stirring)
Allow the meat and greens to cook for another 5 mins on moderate heat.
Lastly, add the fish and put in low heat for 2 minutes to get all the seasoning to simmer and even throughout the food.
Your greens should be ready to serve!
