The debate about who has the best Jollof rice is always a good one. The rift has always been on and off especially between Nigerians and Ghanaians. Fun Fact: Jollof is from Senegal! I will not say who makes the best Jollof. But, I will tell you that your Jollof can only taste as much as the effort, ingredients and time you put into it. On Cooking with Miatta today, we will walk you through some steps as to getting that dream taste of Jollof you can brag about. I’m here to show you how to get that sumptuous taste you want right from the comfort of your home without having to go through the stress of searching for restaurants with quality Jollof. Matter of fact, maybe I should get a Jollof competition started to see some of the amazing Jollof you guys will create using this video. Well for now, let’s dive into some quick steps and set you on track to becoming a Jollof boss in the kitchen. Servings- 5-10 servings Prep Time – 30-40 mins Cook Time- 60-100 minutes Ingredients: • Eight (8) Mix bell pepper (blended) • Five( 5) whole sweet onion (Blended) • A pack of mix vegetables • Hot pepper 3-5 (blended) SEASONING : • 1 tbsp of black pepper • ½ tbsp of salt (sea salt) add to your salt preference and taste. • 1 maggi crevetteshrimp/ chicken buillon or maggi star crayfish/ Nigerian maggi. • 1 knorr cubes • 1 tbsp of badia complete seasoning. • 3-6 packet of goya sazon cilantro achicote. • 1 tbsp of lawry’s all purpose chicken seasoning. • Tomato pasta 1 small cup (Chicken, Fish or Beef) • Use air fryer(20-30) or • Fry in 2 cup of oil Preparing your rice: • Measure , wash your rice and soak in water for 30-60 minutes while prepping other stuff. Let’s get into cooking: • Fry shrimp and chicken nofor 20-30 minutes in air fryer / oil in the pot • Fry mix bell pepper and onions (blended) in 1-2cup of olive oil and cook for 5-10 minutes, add your seasoning and stir thoroughly. • Add tomato paste and stir • Add wash rice , stir and cook for 5-10 minutes • Add mix vegetables and cook for 5-10 minutes • Add the fried chicken and shrimp, stir and cover for 20 minutes. • Ensure the pot is properly sealed to ensure all the moisture needed to cook the rice stays in the pot to be properly parboiled. • Avoid removing the lid while the rice is cooking. Now, after you’re done, mix everything together, stir properly so all the ingredients are evenly distributed to get the best results. You can add or remove some spice or adjust to your comfort level.
